A perfect balance of these factors along with the growing conditions on the coffee farm, the elevation of the coffee farm, how the coffee was picked and processed and dried, are very important to the ultimate taste in the cup. A good local, small roasting company will take great care in selecting only the best green beans from the wide variety of different types of coffee beans and take great care in doing tasting and testing different roasting times, roast level in terms of light to dark, and temperature of the roast. A lot of it is grown at low elevations, on huge farms and in the sun. Most of that coffee is roasted in huge quantities and with the same parameters no matter the coffee source. Don’t just go to Costco or your local grocery store. If you are a coffee shop, office, restaurant, or other related business and you are looking for a good source of coffee we recommend finding a good high-quality wholesale coffee roaster. The best source is a local roaster where you can stop in and talk to the roaster about the coffee and where the roaster puts the roast date on the package. If you brew coffee at home, we recommend finding a good local source of freshly roasted coffee beans. For other types of coffee, such as pour over, cold brew, French press, or drip, the age of the coffee beans isn’t as critical, but you will still benefit flavor wise to have coffee that is as fresh as possible. If the beans are any older than this, you won’t get much crema since most of the CO2 has escaped from the beans. For the best espresso, we recommend you use freshly roasted beans that are less than two or three weeks old. If you have a great espresso machine, great grinder and a lot of barista training, but your coffee is poor quality and old, you will not have good results no matter how hard you try. Whether you are a home user or a business user, high quality, freshly roasted coffee is the most important factor in producing great espresso.
